Fatty, Flaky-textured Fish

 

arctic char  Notes:  A trout relative, the arctic char is highly prized for its sweetness and tenderness.  It's often roasted or smoked.  Substitutes:  salmon OR striped bass

 

ayu = ayu fish = aroma fish  Notes:   Japanese fishermen tie knots around the necks of cormorants (black sea birds) and have them dive and catch these exquisite fish.  They're very sweet and delicate.

black cod   See sablefish.

bluefish  Substitutes:  butterfish (milder flavor) OR whitefish (milder flavor) OR mackerel OR striped bass 

buffalo  See buffalofish.

buffalofish = buffalo   Substitutes:  butterfish OR whitefish

butterfish  (this name is sometimes also given to sablefish) Substitutes:  harvestfish OR bluefish (stronger flavor) OR buffalofish OR whitefish

 

chinook salmon = king salmon = spring salmon  Substitutes:  coho (smaller)

 

chum salmon = dog salmon

 

coho salmon = silver salmon = medium red salmon   Substitutes: chinook (larger)

dog salmon  See chum salmon.

 

escobar  Notes:  This excellent Hawaiian fish tastes like a buttery halibut.  Substitutes:  salmon OR halibut

harvestfish  Substitutes:  butterfish ORbluefish OR herring

Hawaiian salmon  See rainbow runner.

herring  Substitutes:  shad (larger) OR smelt OR mackerel OR small trout

humpback salmon  See pink salmon.

kamanu  See rainbow runner

king salmon  See chinook salmon

 

mackerel  Substitutes: Spanish mackerel OR shad OR bluefish OR herring OR small trout  Storage:    Unopened canned mackerel can be stored for up to a year in a dry, cool place. Once opened, it will keep for up to two days if you wrap it well and refrigerate it.

medium red salmon  See coho salmon.

 

pink salmon = humpback salmon Substitutes:  chum (larger) OR chinook (better quality)

rainbow runner = kamanu = Hawaiian salmon Substitutes:  salmon

red salmon = sockeye salmon = blueback salmon  Substitutes: other salmon (flesh not as red)

sablefish = black cod = (incorrectly) butterfish  Substitutes:  butterfish OR whitefish OR buffalofish

shad  Substitutes:  herring (smaller) OR mackerel OR freshwater bass

silver salmon  See coho salmon.

 

smelt  Substitutes:  shad (fattier) OR anchovies (much stronger flavor) OR sardines (much stronger flavor) OR mackerel

Spanish mackerel = Pacific sierra   Substitutes:  Sierra OR other mackerel

spring salmon  See chinook salmon.

 

trout  Notes:  Includes rainbow trout = steelheadSubstitutes:  shad OR whitefish (flakier) OR sablefish (flakier) OR salmon OR perch

whitefish  Substitutes:  catfish OR pike OR trout
