Darden, the parent company of
the Red Lobster, Olive Garden, Bahama Breeze, and Smoky Bones restaurant
chains, insists they use only trapped-caught lobster and, for years, have
refused any moral or legal obligations to an industry they largely created. We,
too, ran into assertions that one lobster processing company in Nicaragua no
longer processes diver-caught lobster only to learn a few days later that a
diver off a boat owned by the same individual as that same lobster processing
company had been admitted for hyperbaric treatment in Puerto Cabezas.
